Since opening in 2023, Luca's, the signature restaurant at Hotel La Gemma in Florence, has established itself as a notable addition to the city's fine dining scene. Awarded its first Michelin Star, the restaurant combines seasonal Tuscan cuisine with contemporary culinary techniques under the direction of Chef Paulo Airaudo.

A HISTORIC SETTING

Luca's occupies the first floor of Palazzo Paoletti, the 19th-century building that houses Hotel La Gemma. Located in the historic center of Florence, just steps from the Duomo and Ponte Vecchio, the restaurant is situated within one of the city's most recognizable architectural landmarks.

CHEF PAULO AIRAUDO’S CULINARY APPROACH

The restaurant is led by Chef Paulo Airaudo, whose menus are shaped by seasonal ingredients sourced from local producers throughout Tuscany. His approach combines traditional regional recipes and ingredients with contemporary techniques, resulting in dishes that reflect both the area's culinary heritage and modern fine dining.

Each menu is designed as a progression of courses that emphasize balance, texture, and seasonal flavors while remaining rooted in Tuscan cuisine.

Among the restaurant's signature dishes are Goat Cheese Flan with Strawberry Caramel and Aged Balsamic Reduction, and Veal with White Onion, Artichoke, and Morel Mushrooms, both of which illustrate the kitchen's interpretation of regional ingredients through a contemporary perspective.

THE DINING ROOM

The dining room features an Art Deco-inspired design with velvet seating, soft lighting, and architectural details that complement the historic character of Palazzo Paoletti. The interiors reflect the boutique style of Hotel La Gemma while preserving elements of the building's heritage.

THE STORY BEHIND THE NAME

The restaurant is named in honor of Luca Cecchi, founder of the family behind Hotel La Gemma. The name reflects the family's connection to the property and its long-term investment in the hotel's hospitality and culinary program.

MICHELIN RECOGNITION

The restaurant received its first Michelin Star in recognition of its culinary program, joining Florence's collection of Michelin-starred restaurants. The distinction marks an important milestone for both Luca's and Hotel La Gemma, further establishing the restaurant within the city's evolving fine dining landscape.
